Coffee Chocolate Frosting

This coffee chocolate frosting is so rich that you really don't need to have much on the cake for it to be perfect.

It's a butter cream icing made with fresh coffee and whipped cream with chocolate chips. Originally we made it to go on our cappuccino cake. The flavour is perfect.

As always, it's worthwhile buying good quality chocolate chips. Poor quality chocolate is quite greasy and doesn't have such a good flavour.

Because of the richness of the frosting, we only use a thin layer on our cakes. It really is perfect for the cappuccino cake, but also tastes good on chocolate cupcakes and vanilla cupcakes.

Coffee Chocolate Frosting

2 1/2 tbsp white choc chips
1/2 tbsp dark choc chips
1/2 tbsp fresh ground coffee or 1/2 tsp instant coffee
1 1/2 tbsp whipping cream
40g unsalted butter
2 tbsp icing sugar
Cocoa powder to dust

  • Put the chocolate chips into a mini food processor.

  • Warm the cream with the coffee in a small pan until just simmering. Strain through a sieve into the food processor onto the chocolate chips. It won't be hot enough to fully melt the chocolate. Push the last of the cream through the sieve.

  • Add the cold unsalted butter, icing sugar and 1 tbsp of hot water.

  • Process until all the butter and icing sugar is blended, but there are still some small lumps of chocolate.

  • Chill for 15 minutes then spread onto the cooled cake, making sure to get right to the edges. You will find it is a fairly thin layer, but this will be enough - it's quite rich.

Cut into 2 inch squares and arrange on a serving plate.

If not serving straight away, keep the cappuccino cake in a cool place or in the fridge.
