Coconut Cookie Recipe

This coconut cookie recipe is excellent! The cookies have a slight crunch on the outside and they are soft and squidgy in the middle. Easy to make, pretty to look at.... perfect for afternoon tea.

For ease, you can replace the coconut oil with vegetable oil if you wish. But the coconut oil gives it that little extra coconut flavour, and coconut oil is really very good for you!

We added lemon zest to the original recipe, because without the lemon they were rather bland. The lemon zest lifts the taste and brings out the coconut flavour.

These are very pretty uniform cookies that bake reliably every time.

Coconut Cookie Recipe

Time: 20 minutes
(includes cooking)

Makes 15 small cookies
80g (1/3 cup) sugar
50g (1/4 cup) coconut oil
1/2 egg
100g (1/2 cup + 1 tbsp) plain flour
1/2 tsp baking powder
1/8 tsp salt
60g (1/2 cup) coconut flakes
or dessicated coconut
3 tbsp milk
Zest of 1/2 lemon

  • Pre-heat the oven to 350F, gas mark 4.
  • Line a baking tray with baking parchment.
  • Put the coconut oil in a pan and melt over a gentle heat until just melted.
  • Once melted, put the coconut oil into a bowl with the sugar and stir until well mixed.
  • Add the egg and the milk and mix until all the egg is mixed in.
  • Add the flour, baking powder and salt and mix thoroughly.
  • Finally, add the coconut flakes and the lemon zest and stir until incorporated.
  • Divide the mixture into 15 (about a tablespoon). Roll the mixture into little balls and place the mixture onto the prepared tray. Flatten them slightly so that they have a diameter of about 1 1/2 inches. They will spread slightly and be about 2 inches across.
  • Bake on the centre shelf for 10 mins until lightly brown.
  • Remove from the oven and leave for 2 minutes to slightly cool.
  • Move the cookies from the baking sheet to a wire rack and allow them to cool properly. Although I have to say, they are delicious when still very slightly warm....

Serve with

Coconut cookies are pretty to serve on a cake stand with other delicious goodies for afternoon tea, such as tiny meringues, chocolate eclairs, lemon cupcakes and a selection of little finger sandwiches.
I would serve mint tea with this combination, or earl grey.
