Fluffy Frosting Recipe

This fluffy frosting recipe makes a soft and creamy topping for cupcakes that can be piled high or piped into a peak. It is lighter and more sweet than a cream cheese topping. We usually flavour it with vanilla, but you could flavour it with lemon, almond or any other flavour in fact!

Although I love the cream cheese frosting on red velvet cupcakes, this is a really delightful alternative. Our red velvet recipe can be found under chocolate cupcakes.

We have experimented with quite a few vanilla toppings which often use lots of butter or cream cheese. We've found that they sometimes feel a little heavy or cloying, especially on a small cupcake. The addition of a little bit of milk in this recipe helps the frosting to be rich and creamy without being greasy.

To get the best vanilla flavour, it is important to use the best quality vanilla extract (rather than essence) that you can find. Definitely I would never use artificial vanilla flavouring which always leaves your baking with a slightly chemical taste.

Fluffy Frosting

Level: easy
Enough for 12 small cupcakes

250g icing sugar
80g butter
1 tbsp milk
1 tbsp cream
1 tsp vanilla extract

  • Put the icing sugar and butter in a bowl. Cream the sugar and butter together with a metal spoon.

  • Add the milk, cream and vanilla essence. Whisk with an electric whisk until combined.

  • Scrape down the bits from the side with a spatula and whisk for longer (around five minutes) to get the mixture nice and fluffy. The longer you whisk for the lighter and fluffier it will become.

This frosting makes perfect vanilla frosting for vanilla cupcakes. We also enjoy it as a lighter alternative to cream cheese frosting on chocolate cupcakes.
